Zucchini & Eggs

You know those dinners you’d never even thought of until your significant other’s family says it’s for dinner ... this is one of those but I loved it

Ingredients:

  • 18 eggs

  • 3 or 4 medium sized zucchini

  • garlic salt

  • bulky rolls

Directions:

  • Slice your zuccinis into thin round pieces, then toss into a large skillet with a little olive oil and add some garlic salt, cooking over medium heat

  • While the zucchini cooks, crack your eggs and beat them with a fork

  • Add your eggs when the zucchini is tender and scramble it all together until the eggs are done.

  • Serve as a sandwich on a bulky roll, with ketchup or like me, serve in a bowl as is!
