Chicken Pot Pie
This chicken pot pie is quick & absolutely delicious!
Ingredients:
1 rotisserie chicken
1 cup of milk
1 tbsp of flour
Butter
1 cup of chicken broth
1 bag of frozen mixed vegetables (corn, peas, carrots & green beans), 12oz
Salt & pepper to taste
1 box pie crust OR 1 box Bisquick baking mix.
1 egg
Directions:
Pre-heat oven to 350 degrees.
Shred your chicken or cut into bite sized pieces
In a skillet, over medium heat, add in butter once melted whisk in flour, salt and pepper to create a roux.
Once the roux is thickened in your milk and chicken broth slowly, continuing to whisk a little a time to continue thickening the roux.
Add in 1 bag of frozen veggies, cook until softened.
Add chicken and mix well.
Prepare your pie dish; grease the dish and add in bottom layer of pie crust then pour in filling place top pie crust on top, egg wash and cut a few lines in the pie.
Bake until golden, usually about 40 - 45 minutes
**If using Bisquick baking mix as a topping; prep Bisquick by following the directions on the box, place spoon fulls of the Bisquick around top of pie then bake.
