Chicken Pot Pie

This chicken pot pie is quick & absolutely delicious!

Ingredients:

  • 1 rotisserie chicken

  • 1 cup of milk

  • 1 tbsp of flour

  • Butter

  • 1 cup of chicken broth

  • 1 bag of frozen mixed vegetables (corn, peas, carrots & green beans), 12oz

  • Salt & pepper to taste

  • 1 box pie crust OR 1 box Bisquick baking mix.

  • 1 egg

Directions:

  • Pre-heat oven to 350 degrees.

  • Shred your chicken or cut into bite sized pieces

  • In a skillet, over medium heat, add in butter once melted whisk in flour, salt and pepper to create a roux.

  • Once the roux is thickened in your milk and chicken broth slowly, continuing to whisk a little a time to continue thickening the roux.

  • Add in 1 bag of frozen veggies, cook until softened.

  • Add chicken and mix well.

  • Prepare your pie dish; grease the dish and add in bottom layer of pie crust then pour in filling place top pie crust on top, egg wash and cut a few lines in the pie.

  • Bake until golden, usually about 40 - 45 minutes

**If using Bisquick baking mix as a topping; prep Bisquick by following the directions on the box, place spoon fulls of the Bisquick around top of pie then bake.
