Shephard’s Pie

One of my favorite meals as a kid & to this day.

Ingredients:

  • 2lbs ground beef

  • 3lbs potatoes, mashed & seasoned

  • 1 can corn

  • 2 cans cream corn

  • 2 cans French style green beans

  • 1/4 stick of butter

  • 1/4 cup parmesan cheese

Directions:

  • Preheat oven to 350°

  • Wash, cube, & boil your potatoes. I use red potatoes and leave the skin on.

  • While the potatoes are cooking start cooking your ground meat of choice in a skillet.

  • When the potatoes are fork tender, drain the water & add half a stick of butter, a cup of evaporated milk, garlic salt, onion powder, black pepper, parsley and chives to taste - then mash.

  • Drain any grease out of the ground meat and add to the bottom of casserole dish. Add a layer of can whole kernel corn, one can cream style sweet corn, & one can French style green beans. Top with mashed potatoes.

  • I sprinkle a little Parmesan cheese on top because it’s gives the top a nice coating and add a few slices of butter.

  • Bake for 30-40 minutes & rest for 20 minutes.
