Roasted Chicken

It took a long time for me to find a roasted chicken recipe I loved & didn’t want to change & this is it. Plus left over chicken makes for great quesadillas later in the week!

Ingredients:

  • 4-5 lb whole chicken

  • 1/2 stick of butter

  • 4 tablespoons

  • minced garlic

  • 1 teaspoon salt

  • 1 tablespoon basil

  • 1 table spoon lemon pepper

  • 1 tablespoon thyme

  • 1/8 cup lemon juice or 1 lemon cut in half

Directions:

  • Clean out chicken, rinse and pat dry.

  • Place chicken breast side up on baking rack.

  • Add 2 tablespoons minced garlic, a pinch of salt and lemon juice or lemon halves into the cavity.

  • Melt butter and mix in 2 tablespoons minced garlic and spices then rub all over chicken.

  • Tie the legs together using kitchen twine.

  • Roast at 450° for 15 minutes -then reduce temperature to 350° and roast for 1 hour 20 minutes or until internal temperature reaches 165°.

  • Let rest for 20-minutes.
