Pickled Red Onions
These are a kitchen staple, & you should always have a jar in the fridge ready to go! Ingredients:
Ingredients:
1 medium red onion, sliced
2 cups apple cider vinegar
Spices; sugar, salt, black peppercorn, coriander, mustard seed, cloves & cumin.
1 Mason jar
Note: I don’t make my pickled red onions to can, I do a jar at a time and pop them in the fridge, but you can adjust this recipe and can your onions instead if you wanted to! You can also change the spices used and use white vinegar if perferred!
Directions:
Place your sliced red onions in your mason jar, put in a tablespoon of the peppercorn, coriander, mustard seed, cloves & a teaspoon of cumin.
Using a small pot, add apple cider vinegar, salt and sugar and bring to a boil.
Once boiling, turn down the heat and let simmer for about 5 minutes while stirring.
Pour hot apple cider vinegar mixture into your mason jar and close the lid.
Let cool then place in your refrigerator until ready for use!
